 Welcome to Salateen, come sir, don't disturb, happy birthday to you Open your mouth and close and welcome to salateen's main branch Hala Naka! Assalamu-Alaikum, I'm Zia Tabarak! And right now I'm at Hala Naka, Hyderabad! And behind me is salateen hotel! It's famous for their chicken, mutton, beef karahis, namkeen boti and BBQ It's quite packed over here And this is a fairly old roadside highway restaurant This was actually an old truck stop but this place got famous for it's food! People started travelling from afar to eat here Which is why we're here too! To try out their karahis, namkeen boti and other stuff  And to show them to you too! So let's go! (chalain!)  How's it going? Oh I'm fine! Quite the lively environment of karahis being made here!  These stoves look damn good!  Yeah these are our speciality!  True but I think the wood gives the food it's essence, don't you? Correct! Yeah the wood gives it the flavor! It's the technique plus the wood! Wood's piled up over here The stove looks like a grill, wood keeps coming in  And the karahis keep coming here for cooking! Nice!  Waalaikum-as-salam So what's your name? What's your channel's name? Street Food PK! But what's your name? Syed Noor! For how long have you been here! I came here when Hala wasn't even populated! So how many years? About 30 years I think? Karahi's and BBQ were pioneered here by salateen! People eventually copied our name due to our fame But this salateen is the real deal! And here's the mutton namkeen Are you mixing them all up? Yeah to ensure the same kind of meat in both plates! Nice! So what's the price of the mutton seekh? It's sold in three variants, 1800/kg is the meat So even karahi? 

We have three simple items, mutton namkeen, brown karahi and the regular karahi Right Brown karahi has spice, peppers, is made in the karahi pan Alright But it has no gravy Oh! And the regular one has gravy, tomatoes and all the spices! Then we have the namkeen boti! Gotta have red-hot coals if you want the meat to be awesome! The meat won't taste good unless the coal ain't red And the meat will stay raw! Very true indeed!

 So the meat's 1800/kg And you can get either mutton namkeen or the regular karahi or the brown one! Exactly! So just like in Peshawar? Yep! Salam brother! Tell us, what do you do? Ask him! You've got a nice malang attire eh? Exactly! Malang saeen! And if you get his hair you'll totally become a malang! I know right! So the hotel runs all throughout the night? Yeah till 3 AM Till 3, awesome! You start in the evening right? Not in the afternoon? No we start from 1 PM till 3 AM It's a saturday, so when will you close today? 

Till 5 AM! Are these goats of a small size? Yeah they are! Each weighs about 7.5-8 kilos Alright! And what about goats heavier than that? Well then the meat doesn't cook easily then Yeah, hard to cook those! Smaller goats quick easily and faster! Can't cook bigger ones easily! Right! We got the meat chopped here We're skewering the boneless meat now! Just the boneless one? Yeah, boneless and boned differently! Oh! Yeah because it tastes better and balances well on the skewer So one skewer with boneless only? No, a skewer can have both types of meat We started with boneless so that's what we'll carry on with Okay Because if we start adding the boned meat too then

 The bones will blacken but the boneless will stay raw So boneless together, now this is rib-meat, gotta fold it twice Because one single fold won't let it get skewered easily Skewering meat too is a technique Next up will be the boned meat, not the boneless All of the meat next will be boned It'll be easier to cook that way True Gotta ensure the meat doesn't hang under the skewer If it hangs, it burns! One side will be left uncooked, the other cooked Gotta skewer it in this exact manner Awesome! 

So this weighs about half a kilo Nice nice! What do you do here? I handle the salads and rotis So you basically wait the tables? Yeah exactly Great! And this is the karahi station! So many karahis being cooked here at once From that end to this one!

The view, the karahi and then tea comes in this traditional style Just wow! Tea's made on wood too? Indeed! Everything's made on wood and coal And drinking tea like this, in a place like this! Awesome, really awesome Refreshes you completely, takes out all the tiredness away How do you remember which karahi has what? Because there's so many of them! Well it's becuase of experience!
